Most of the popular tracking programs allow you to print out a table of 
az/el values for a defined time step for any given satellite...  before I 
went to computer-controlled rotors I used the tables provided by Instant 
Track.  You can also guesstimate where to point if you know the AOS 
position, LOS position, and max elevation, and peak the signal with a little 
waving and twisting.
