 For an impromptu mobile setup, a "directional microphone for ipad" does the trick, 
that is of course if you knew before-hand and is also a bit expensive.

Unfortunately, I have no way of wiring in direct audio from the podium or
moving a speaker.

For future Symposia, we will put an adequate streaming solution into the
checklist documents.
